My current favorite is geoDefense ( http://www.appolicious.com/apps/geodefense-critical-thought-games-::24947 ). It's a tower defense style game with multiple levels of difficulty. I'm currently working my way through the "medium" levels. It's a great game for me because I can play it for just a few minutes here and there when I have a chance.

I have to say Flight Control, Peggle and iShoot have been the most addicting.

Great suggestions so far - a game that just came out (which is similar to Minigore) is Guerrilla Bob. It's fantastic! Plus, it's another cool cross-over title from Chillingo--the final boss is John Gore. :)

The monkey game is like Loco Roco: http://www.tubesfan.com/watch/loco-roco-hi-mobile instead of a cute singing sponge or some thing jell form they changed the charcte to ugly monkey, they should title that.
I prefer to play in between, just gambling at e. g. the bus stop.
Demolition Dash released a game for iPhone, iPad, iPod last Thursday and I have to say it is quite cool. If you like the endless run mode, you will love it!
It is jump&run game with perfect graphics! And the best, you just have to use two buttons.
