productivity app: "Task This" - I've only just started using this, but so far is looks like it has a lot of potential.
games: "Syd Sym" - A wonderful little puzzle game, but then, I am biased, since I made it.
photography apps - I don't use any camera apps at all, the in built one works fine for me, in conjunction with uploading via the (official) Facebook & Twitter Apps.
music apps - Again, I don't use any 3rd party apps for music on my iPhone, the iPod app works great!

I think these are my definite must have apps that I use or play with regularity. MotionX GPS Drive is only useful in the US, however so if you are elsewhere, don't bother with that one. Flickit is obviously only useful if you use Flickr. Touch Mouse is the best app I've found for controlling the mouse and keyboard on your computer. I use it as a remote to watch movies when I am sitting on my bed watching Hulu or Netflix or a DVD on my computer monitor. And it's free. I left off all the apps that come when you get your new iPhone, but quite a few of those are obviously useful. Safari, App Store, iTunes, Clock, Calendar, Contacts, etc.

I would help that person to come up with categories and then suggest a "starter" app or two for each one. For example, they might find the following categories to be important to them: Productivity, Games, Music, News, Health, Social Networking, and Shopping. I'd then refer them to apps that fit their needs in each category and have the happy iPhone/iPod owner take it from there!

I just recently got an iTouch and my new favorite apps are Fingertrap and Urbanspoon!
Fingertrap is pretty addicting, part of the game is keeping your finger on the screen and collecting coins...problem is I keep forgetting if you take your finger off your screen the game's over!!

The apps I use daily are Pandora (haven't tried Spotify yet, but that might even be better), Words With Friends, Word Assist to help lookup words for WWF, Kindle, Zite (personalized news reader), Facebook, but just because having it installed helps make other Apps that use FB take advantage of Single Sign On, otherwise I don't like the FB app very much Soundhound for identifying songs on the radio and getting their lyrics, Magic Heart for sending love notes to my friends!
