Cleartune - Chromatic Tuner Cleartune is quick and easy to use. Finding a desired pitch is nearly effortless. You can tune stringed instruments as well as brass, woodwinds, tympani, etc.
Drum Kit Drum Kit includes a six piece set: snare, bass, hi-hat, crash, ride and splash. You can play multiple drums simultaneously and add beats or fills as you play along with existing music.
Thereminator No song is complete without a sci-fi or spacey sound.
Ellatron Ellatron is a synthesizer inspired by Mellotron. It includes 27 voices, 16 banks of programmable chord buttons and fatter keys for those with big thumbs, er, easier use.
FingerBeat Inspired by retro synthesizers and samplers, this app allows you to record external sounds or load existing ones from the library.
PocketGuitar - Virtual Guitar in Your Pocket PocketGuitar includes sounds from six different instruments: acoustic electric guitar, classical guitar, electric guitar, muted guitar, ukulele and bass.
BeatMaker This is the most expensive app on this list, but I've been told it's worth the price. BeatMaker includes 16 sample-based trigger pads with multi-touch support, live pattern recording and arranging, multi track song sequencer AND the ability to export your songs to WAV and MIDI.

Don't forget Thumbjam. An expensive app, but easily the best one I have used for music creation. The samples are extraordinary.
